Golden Mango Butter Chicken

Ingredients

- For the Marinade:2 tbsp Auntie Rana's Golden Mango Achaar
1/4 cup plain yogurt
1 tbsp lemon juice
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp chili powder
Salt to taste - For the Chicken:500g chicken (boneless, skinless thighs or breast, cut into bite-sized pieces)
- For the Sauce:2 tbsp butter
1 tbsp Auntie Rana's Golden Mango Achaar
1 small onion (finely chopped)
2 cloves garlic (minced)
1 tsp grated ginger
1 cup tomato puree
1/2 cup heavy cream
1 tsp garam masala
1/2 tsp turmeric powder
Salt to taste
Fresh cilantro leaves for garnish - Critical Accompaniments: Steamed rice or naan bread

Cooking Directions
- Sear the Chicken: Heat a skillet over medium heat and add a drizzle of oil. Sear the marinated chicken pieces on both sides until lightly browned, about 2–3 minutes per side (it will finish cooking in the sauce). Remove and set aside.
- Sauté the Aromatics: In the same skillet, melt the butter over medium heat. Add the onions and sauté until golden brown. Stir in the garlic and ginger paste, cooking until fragrant.
- Build the Sauce: Add the pureed tomatoes, finely diced Golden Mango Achaar, turmeric, cumin, garam masala, and red chili powder. Stir well and let the mixture cook for 8–10 minutes, allowing the chunks of achaar to soften slightly and blend into the sauce while retaining their texture.
- Add the Chicken: Return the chicken to the skillet, coating it with the sauce. Add water if needed to adjust the consistency. Simmer for 10 minutes until the chicken is fully cooked and tender.
- Finish with Cream: Stir in the heavy cream and cook for another 2–3 minutes until the sauce becomes rich and creamy. Adjust seasoning with salt as needed.
- Serve and Garnish: Serve hot, garnished with fresh cilantro and sliced green chilies, alongside naan or steamed basmati rice.
